stuffed mushrooms


  • 6-8 large button mushrooms
  • 4oz lump crabmeat (or imitation which is what I used)
  • extra virg olive oil
  • 3 cloves of chopped garlic
  • 1/4 cup breadcrumbs
  • 6oz feta cheese
  • juice from one lemon
  • 1 tbsp fresh chopped parsley
  • salt and pep to taste


Preheat oven to 375.

Wash and dry your mushrooms well. Set them on a foil lined baking sheet. Remove the mushroom stems and finely chop. Heat a drizzle of oil over high heat. Add mushrooms and saute until soft. Add finely chopped crab meat and saute for 2 minutes. Add garlic and stir to combine (about 7 minutes). Remove from heat and add the rest of your ingredients.

To stuff mushrooms, take a heaping tablespoon of stuffing and compact into a ball in your hands. Press the stuffing firmly into the mushrooms.

Bake in the oven for 35-40 minutes or until mushrooms are tender.
