I made a quiche with caramelized onions, mushrooms and gruyere for din last night. I used this recipe courtesy of Ellie Krieger from the Food Network. It’s a “healthier” recipe made with only 3 eggs and 3 egg whites. I took a shortcut and used a pre made whole wheat piecrust. Served with a simple salad of masculine greens, heirloom cherry tomatoes, kalamata olive slivers, and a homemade lemon dijon vinaigrette, it was a delicious and easy meal.
