pasta + tomatoes + eggplant + mozzarella

This pasta was amazing and incredibly easy to make. I used this recipe I got from Real Simple. I substituted the penne for stracciatella pasta.

I cooked using Mandranova extra virgin olive oil that I got from Eataly. It was kind of pricey but, it is now a proven fact that using a really good olive oil truly makes a difference.
