hummus and crackers

The recipe for these Sea Salt and Poppy Seed Crackers is from this awesome blog I just discovered called Joy the Baker. After I made the crackers I obviously needed something to dip them in! Being that I am hummus obsessed – and really who isn’t? – I made this really simple Roasted Red Pepper Hummus. I had red peppers in the fridge so I roasted them in the oven, but jarred red peppers work just as well.

Ingredients:

  • 2 cloves garlic, minced
  • 1 (15 ounce) can garbanzo beans, washed and drained
  • 1/3 cup tahini
  • 1/3 cup lemon juice
  • the zest from half a lemon
  • 1/2 cup roasted red peppers
  • 1/4 extra virgin olive oil
  • 1/2 teaspoon paprika
  • 1/2 teaspoon red pepper flakes
  • salt and pepper to taste

Directions:

Chop garlic in food processor. Add beans, tahini, lemon juice, zest, olive oil, paprika and red pepper flakes and process until smooth. Add roasted peppers and pulse until evenly combined. Season with salt and pepper. Chill and serve.
